Boring Road Crossing is always a mess of traffic and people shouting, and that is where we are in G.V. Mall. If you know the mall, you know our spot. Inside the shop, it’s mostly about the heat from the stoves and the smell of the spices we use. Peshawari Chicken has been here for a bit now. We spend a lot of time doing prep work in the mornings, chopping things and getting the marinade ready. It gets really loud in the evenings when everyone is out in Patna looking for a bite. The mall has its own crowd, but we get people just stopping by on their way home. The tiles on the floor are a bit worn down from all the walking, but we keep them scrubbed. We don't have fancy decorations or anything. There are just tables and chairs and the kitchen is right there. Sometimes the delivery guys are all bunched up at the door waiting for orders. It gets a bit chaotic when three orders come in at once and the tandoor is already full. My cousin helps out with the accounts, and we just try to keep everything moving. We’ve been here in this part of Patna for a while now. You can hear the horns honking from the street all day long. We just stay focused on the cooking and making sure the coal is at the right temperature for the grill. It's a busy life for us.
