You can find Payal Restaurants inside the Ritz Hotel, which is right on Ashok Rajpath in Patna. This part of the city is always moving, and being on such a main road means there’s never a quiet moment outside. We’ve been operating out of this hotel location for quite a bit of time. It’s a convenient spot for people staying at the Ritz, but we get plenty of folks just walking in from the street too. The interior is simple and functional. We don't go in for much decoration. The kitchen team focuses on the daily menu, making sure there's enough for the lunch rush and the dinner crowd. Ashok Rajpath is a historical stretch, and you can feel that energy around here. We see students from the nearby colleges and people working in the local markets. Sometimes the traffic outside makes it hard for deliveries to reach us on time, but we manage to work around it. Running a restaurant in a hotel means we have to stay on our toes from breakfast until late at night. We don't have a big marketing team or anything like that. It’s just us, the cooks, and the servers trying to do a decent job every day. The floors get swept, the tables get wiped, and we wait for the next person to walk through the door. It is just everyday life in Patna for us.
