Patna da dhaba

This dhaba is located at Sadhna Sadan on Boring Road in Patna. We are right by the Pani tanki and not far from the Shiv Mandir. Boring Road is a busy place, always full of students and people going to work. We wanted to create a spot that felt like those old-school roadside dhabas even though we are in the middle of the city. The food is simple, the kind of stuff you can eat every day without getting bored. We use a lot of local spices and try to keep things authentic. The place isn't decorated with anything special, just tables and chairs and the smell of food coming from the back. We open early to get the lentils and vegetables started. It’s a bit noisy because of the traffic outside, but people don't seem to mind once they sit down to eat. We have a few guys working the tandoor and the stoves who have been with us for a while. It’s a lot of routine, but we like it. Sometimes we run out of certain items by the end of the night because we don't like keeping leftovers for the next day. The crowd is a mix of everyone—college kids, office workers, and families. We don't do anything fancy with the presentation; it’s just good portions served on plain plates. That’s how a dhaba should be. We’re just happy to be a part of the daily life here in Patna.
