Premium Tofu Mfg. Co. is tucked away in the Ram Mandir Industrial Estate in Goregaon East. Specifically, we are at unit 3/17. If you walk down Ram Mandir Road, you’ll see plenty of small factories and warehouses. Ours is the one that’s usually busy with soy beans and water. Making tofu is a bit of a messy process, so we are always wearing boots and aprons. It’s a lot of steam and heavy lifting. We start the soaking process early so we can have the blocks ready for the morning deliveries. The industrial estate has that old-school Mumbai feel to it. It’s crowded and the lanes are narrow, but it’s where work gets done. We’ve got a small crew of guys who have been with us for years. They know exactly how the curd should look before it’s pressed. We don’t have a fancy website or a PR person. If you want to talk to us, you usually have to shout over the sound of the machines. It’s a bit hot in the unit, especially during the summer, but we keep the fans going. Goregaon East is a good spot for us because it’s easy to get the tofu out to the rest of the city. We just focus on making a solid product and getting it packed right. It’s a long day, but it feels good when the crates are finally loaded.
