Parfait

Vile Parle West is where we set up. It’s a nice area but it stays busy. We’ve been here at this spot for a while now. The morning usually starts with checking the fridges and making sure everything stayed cold overnight. We do a lot of prep work in the back room which is actually bigger than the front retail space. Sometimes the neighbors come in just to chat while we’re setting up the display cases. It’s a lot of work keeping things looking okay and making sure the glass is clear. We don't use any fancy machines, just standard kitchen tools that we've had for a long time. The floor is a bit old and has some cracks, but it’s clean enough. We get a lot of students from the nearby colleges coming in between their classes. They usually stay for a bit and then head out. We try to keep the music low so people can talk without shouting. Sometimes the power goes out for a few minutes and we have to scramble to keep things from melting. That’s just life in Mumbai though. We didn't want a place that felt like a big chain, so we kept the setup simple. Most of the furniture we bought ourselves from a local market. It feels like home to us since we spend more time here than at our actual houses. The street outside is usually full of parked scooters and people walking to the station. It is a loud place but it feels right.
