A Schezwan Pepper

Down in Kala Ghoda, we have our setup called A Schezwan Pepper. This part of town is full of old buildings and galleries, so it has a different feeling than the rest of Mumbai. Our place is pretty simple, just a kitchen and some space for us to work. We focus on the spicy food because that is what we are good at making. The smell of vinegar and chilies is usually pretty strong in the air while we are cooking. It is a busy area, especially during the art festivals, so we see a lot of people walking by our door all the time. We do not have a fancy dining area for people to sit in. It is more about the cooking and getting the food out to the customers who are waiting. The plumbing in these old buildings can be a bit of a headache sometimes, and we have had to deal with a few leaks over the months. We spend a lot of our time prepping the sauces and chopping piles of ginger and garlic. It is hard work and the kitchen gets very hot during the rush, but we just get on with it. We don't have a big staff, so everyone has to help out with the cleaning and the dishes at the end of the shift. We are just a small part of the neighborhood.
