You can find us at 1/108 Jodhpur Park, right along Gariahat Road. It’s a very busy part of Kolkata and things never really stop moving outside our door. We are in Ward 93, so there is always some kind of activity or local event happening nearby. We run this restaurant with a small group of people who have been around for a while. Usually, the mornings are spent prepping vegetables and checking the ovens to make sure everything is working correctly. Gariahat Road is always loud with horns and buses, so you get used to that sound pretty quickly while you work. We chose this spot because it's right in the middle of everything. The space isn't huge, but we make it work by staying organized, or at least trying to. Some days the sink leaks or a delivery is late, and we just have to figure it out on the fly. It is a lot of standing on your feet for hours. We don't have any corporate bosses telling us what to do, just us trying to keep the place running. We serve the people who live around here and the folks passing through for work. It’s a simple setup. We put out the chairs, open the shutters, and start the day. The rain sometimes floods the street a bit right in front of the door, so we have to keep some old rags handy. It is just part of living and working in this city.
