Subway

Our shop is at 10 Panpara 1st Lane, near the Talpukur post office in Barrackpore. It is an interesting spot in Kolkata. We have been here for a bit now, making sandwiches for whoever walks in. Being a Subway in this part of West Bengal means we get a real mix of people. Some are in a huge hurry to get to the station, and others want to sit down and chat for a while. We spend a lot of time prepping veggies and making sure the bread is okay. It is a simple routine, really. The kitchen area is small, so we have to be organized or it becomes a mess. It gets pretty humid here, especially during the monsoon, so we are always checking the fridge and the air conditioning. We are not trying to change the world; we are just making lunch and dinner for the neighborhood. It is not a fancy restaurant, just a place to grab something to eat. We have our regulars who come in and order the same thing every single time, which is nice. Then there are the people who can not decide what they want. We just wait and help them out. The lane outside can be a bit narrow and crowded, but that is just Barrackpore for you. We are just here doing our job, day in and day out, at the same old spot near the post office. We just make sure the ingredients are fresh and the floor is clean.
