Sourav'S - The Food Pavilion

Sourav'S - The Food Pavilion is over on Bagmari Road, specifically at P-4 in the C.I.T. Scheme VII M area. Kolkata 700054 is a busy part of town and we are right in the middle of it. The kitchen stays hot most of the day and there is always the sound of knives chopping or pans clanking. We aren't one of those fancy places with white tablecloths and quiet music. It’s loud, it’s busy, and it smells like spices and fried onions all the time. We have people coming in for a quick bite or picking up parcels to take home to their families. The floor gets a bit slippery sometimes and we are constantly cleaning up. We do our best to keep up with the orders, especially during the lunch rush when everyone seems to arrive at once. The staff has been here for a while, so we all know what to do without talking much. We get our supplies from the local market early in the morning. Sometimes the delivery van gets stuck in the narrow lanes of Bagmari. It’s a lot of hard work and sweating over the stove, but that’s the food business for you. We don't have a big marketing team or anything like that. We just open the shutters, light the burners, and start cooking. It’s a simple setup and we like it that way because it feels real.
