Our business, Suvo Caterer, is located in the Tangra area. Tangra has its own unique feel, and we’ve been part of it for some time now. It’s an area known for its history and its food, so there’s a bit of pressure to keep things up to a certain level. We don't have a big, fancy address; we just operate right out of Tangra. The workspace is filled with large pots, industrial stoves, and the constant sound of knives on cutting boards. It’s a very manual process. We don't rely on a lot of machines. Most of our cooking is done by hand, the way it’s been done for years. My team consists of guys who have been doing this since they were young. We know how to handle big crowds without getting flustered. We don't do much in the way of advertising or social media. Most people find us through word of mouth. If someone likes what we served at a party, they ask for our number. That’s how we’ve always operated. The streets in Tangra can be quite busy, so moving our equipment around takes some planning. We focus on the flavors that people in this part of the city enjoy. It’s not about being the most modern; it’s about being reliable. We show up, we cook, and we make sure there’s plenty of food to go around.
