Our little spot is over at 48 Seth Bagan Road in Ghughudanga, not far from the Dum Dum Junction train station. Because we are so close to the tracks, you can sometimes hear the trains rumbling past if the wind is blowing the right way. The street outside is usually a bit muddy during the rains, and there are always people rushing to catch their trains. We open up early and start the day by cleaning the tables and checking our supplies. It’s a small space, so we have to be very organized or we’ll just be bumping into each other all day. There’s nothing corporate about how we run things; it’s just us and a few helpers. We spend a lot of time in the small kitchen area where the light isn't great, but we know where everything is by heart. The neighborhood is quite old and the buildings are all squeezed together, so we know all the other shopkeepers on this road. Most of our regulars are people who live right here in Ghughudanga or workers passing through on their way to the station. We don't have a fancy menu or a lot of decorations on the walls. It’s just a plain room where we work hard and hope people enjoy what we've made. We usually close up once the dinner crowd thins out and then we do it all again the next morning. It’s a lot of the same thing every day, but we like the routine and the people.
