Shrimati Food Service

Shrimati Food Service operates out of a small space at 1/A, Gobinda Pal Lane in Cossipore. It is a narrow little lane, typical of this part of North Kolkata, where everyone lives pretty close together. We don't have a big storefront or a dining room for people to sit in. Instead, most of what we do involves cooking large batches of food for people who need it delivered or picked up. The kitchen is the heart of the whole operation. It gets very hot in there, especially during the humid months, but the stove never really stops. We start very early in the morning when the vegetable markets open so we can get everything fresh. There’s a lot of chopping, peeling, and stirring involved before the sun is even fully up. The smell of mustard oil and spices usually fills the lane, so the neighbors always know what we are making for the day. It’s a local business through and through, run by people who grew up around here. We handle the containers and the packing ourselves, making sure everything is shut tight before it goes out. Sometimes the delivery timing gets messed up because of the traffic on the main roads, but we do what we can. It’s hard work, and my hands usually smell like onions at the end of the day, but that is the nature of a food service.
