Being over here at 30A, Abinash Sasmal Lane in Beliaghata means we’re tucked away a bit. The lane isn’t very wide, so getting the big pots through can be a struggle sometimes. We’ve been operating Shila Caterer from this spot for quite a bit of time now. It’s a family-run sort of thing. You’ll usually find someone sitting near the entrance checking the delivery lists. Our kitchen is where most of the life is. It gets hot in there, especially in the summer months, but that’s just how it goes with cooking for large groups. We don’t use any of those big corporate systems to track things. Most of it is just remembered or written on pieces of paper stuck to the wall. Beliaghata is a good neighborhood, and we know many of the faces around here. When someone has a wedding or a small gathering, they just walk over to the lane and find us. We don't have a glossy brochure or anything. If you come by, you’ll probably see us sorting through lentils or cleaning the big aluminum containers. It’s a mess sometimes, but we keep it moving. The neighbors are used to the smell of frying fish and spices coming from our windows. We just try to keep the food decent and make sure nobody goes hungry at an event we’re handling. It’s plain and simple work for us and we just keep it moving one day at a time.
