Our restaurant is located at 199/4 on Jessore Road in the Rajbari Colony area of Kolkata. We are sitting right beside the Xing Car Decore shop, which is usually how people find us. Jessore Road is one of those places that never really stops, so there is always the sound of horns and engines outside our door. Inside, we have a very basic setup for diners. We don’t have any fancy lighting or designer furniture. It’s just a regular local eatery where we do all the cooking ourselves. We spend most of our day in the kitchen prepping ingredients we bought from the local market that morning. It’s a small team here, so we all take turns serving and cleaning the tables. The Rajbari Colony neighborhood is where most of our customers come from. We’ve been here for a while and have seen many shops come and go. It gets quite warm in the summer, even with the fans going full blast. We don't have a big menu with hundreds of items. We just stick to what we know how to make well. It’s hard work and the hours are long, but we’ve built a routine over the years. We usually stay open until the traffic on Jessore Road starts to die down at night. There’s nothing corporate about our place. It’s just a regular spot for a meal when you're in this part of Kolkata. We just cook and clean.
