Being right near the Thakurpukur Police Station at 7, Pally Mangal Colony makes us pretty easy to find. This neighborhood is where most of us grew up, so the people we cook for are often neighbors or folks from the next colony over. We don't have a big marketing department or anyone to handle fancy ads. It's mostly just the core team in the kitchen and a few extra helpers we bring in for the serving part. The morning usually starts quite early with the sound of the big burners lighting up. We spend a lot of time debating which rice is better or if the salt levels are right for the dal. It’s a normal kitchen environment, which means it’s a bit chaotic but we always get the orders out. We take on whatever comes our way, whether it's a small birthday party or a slightly larger gathering. We don't use a lot of fancy words to describe what we do here. We just cook the kind of food that people like to eat at home. Sometimes we have to deal with things like power cuts or water issues, just like anyone else living in Thakurpukur. We just find a way to work around it and keep going. We just want to finish the day knowing the food was okay and everyone got fed. It's a simple business run by regular people. We’ve seen the area change a lot, but we’re still here at the same spot in the colony.
