Middleton Street is always a bit crowded, and that is where we have our catering spot. We have been working out of this building for quite a while now. Most days start very early when the sun is barely up because that is when the cooking has to begin. We handle a lot of big pots and heavy trays of food. It is hot in the kitchen, but we have gotten used to the steam and the noise of the burners. We do not do anything fancy or over the top. It is just real food for people who need it for their parties or office lunches. Sometimes the orders are small and other times we are packing hundreds of boxes until our hands hurt. We get our vegetables and meat from the local markets nearby so everything is what we can find that day. The team here is small. We know each other well and we do not need to talk much to get the work done. You will usually find someone washing up or loading a van out front. It is hard work and the floor is often slippery with water, but we keep at it. We are just a local business trying to make sure the food is ready on time and tastes like it should. There are no big secrets here, just a lot of chopping and stirring until the day is over.
