You can find us at C32, Satyajit Kanan in Mukundapur, right near the Shitala Mandir. It is a busy part of Kolkata, and our kitchen is usually running from early morning. We handle a lot of food preparation here for different occasions around the neighborhood. It is not a restaurant where you sit down, but more of a hub where we get the big pots and pans ready. The smell of spices is always in the air, especially when we are frying things for a party. We spend a lot of time talking to local suppliers for vegetables and meat. Sometimes the heat in the kitchen gets to be a lot, but we are used to it by now. The Shitala Mandir is a good landmark for people trying to find us for the first time. Our staff is mostly local guys who know how to handle big batches of rice and curry. We don’t have a fancy office with air conditioning, just a solid space to cook and pack things up. It gets pretty chaotic when there are three or four orders on the same day. We just keep our heads down and focus on getting the salt and spice right. It is hard work, standing on your feet all day, but it feels good when the delivery van leaves and everything is ready. We just want the food to be decent and the containers to be full.
