We have been running this catering spot at 13, Iswar Mill Lane for quite some time now. Beadon St is always a bit noisy, especially in the mornings when the market starts up. We spend most of our time in the back room prepping big batches of food. It’s a tight space with several of us chopping onions and stirring heavy pots on the burners. You can hear the sounds of the street coming through the windows while we work. Sometimes the humidity in Kolkata makes it tough in the kitchen, but we just keep the fans going. Our place isn't anything fancy to look at from the outside. It’s just an old building where we get things done. Most days we are busy loading up the delivery vans to take food to different parts of the city. We know the neighbors around here well, and they often see us dragging crates out to the lane. The floor gets a bit messy during the day with all the crates and bags of rice sitting around, but that’s just how it goes when you’re busy. We don’t have much time for decoration because the cooking takes up the whole day. People usually find us by word of mouth or just seeing the sign when they walk past towards the main road. It is a simple life here, just making sure the salt is right and the containers are packed tight before the trucks pull away into the traffic.
