Madan Chatterjee Lane is where you’ll find Kothari Caterers Private Limited. We are at 10A. It’s a narrow street, so getting our delivery vans in and out can be a real headache sometimes. We do catering, which basically means we spend all our time in a big kitchen preparing food for other people's parties and events. It’s frantic work. There are always onions being chopped or big tandoors being fired up. We aren't a high-end restaurant with white tablecloths. We are the people behind the scenes making sure there’s enough dal and roti for five hundred people. We don’t have a polished corporate vibe. Most of us are covered in flour or spices by the end of the shift. We’ve been doing this for a long time in Kolkata. We don't use fancy talk about how we are the leaders; we just try to get the food delivered on time and hope the traffic doesn't ruin everything. Sometimes we forget a ladle or a stack of plates and have to rush back, but we manage. It’s a lot of physical labor, lifting heavy pots and loading crates. We don't have a big mission. We just cook the food and serve it. That’s what our days look like here at number 10A. It’s noisy, it’s hot, and it’s always busy, but that is the catering business for you. We just keep the fires going and the plates moving.
