J K Caterer is located at 8 A, Biplabi Pulin Das Street, which is just around the corner from the Amherst Police Station. Being so close to the station means there’s always a bit of activity going on outside our door. Most mornings start with the sound of shutters opening up and down the street. We usually get in early to start the day, often while the air is still a bit cool. The kitchen gets hot pretty fast once we get the burners going. It’s not a big fancy place, just a regular workspace where we get things done. Sometimes the traffic on Biplabi Pulin Das Street gets a little backed up, especially when the delivery vans are trying to navigate the narrow spots. We’ve been at this address for a while now, so we’ve seen the neighborhood change quite a bit. You see the same faces every day, from the local tea seller to the people heading to work. We spend a lot of our time just managing the daily routine, making sure the supplies arrived okay and checking the lists. It’s a lot of manual work, standing on your feet and moving heavy pots around. We don't really have time for much else. By the time the sun starts to go down, we’re usually winding things down, cleaning up the floors and getting ready to do it all over again tomorrow. It's just a regular life here.
