We’ve been based out of this small spot near Santoshpur Burtolla for years. It’s located at 19/1 Kali Kumar Mazumder Road, which isn't the easiest place to find if you aren't from around here. We handle a lot of local weddings and small family gatherings in the Santoshpur area. My team and I spend most of our mornings prepping vegetables and getting the spices ready for the big pots. It’s hard work, especially when the weather is hot, but we’re used to it by now. We don't really do fancy menus with names you can't pronounce. We just stick to the traditional stuff that people in Kolkata actually like to eat at parties. Sometimes the kitchen gets a bit chaotic when three orders come in at once, but we manage to get the food out on time. I started this because I liked cooking for my neighbors, and it just grew from there. We don't have a big office or anything, just the cooking space and a place to keep the utensils. Most of our work comes from word of mouth. People tell their cousins about us, and then we get a call. It's a simple business. We focus on getting the salt right and making sure there's enough food for everyone. That’s pretty much the whole story of how we run things here. Sometimes we run out of chairs, but people don't seem to mind much as long as the food is hot.
