Guins Caterer

In Bowbazar, the streets are narrow and the buildings have been there forever. We are at 9B Nirmal Chandra St, which is a busy area of Kolkata. Most days start long before the sun is up because the market waits for nobody. We have to get the produce and the meat early to make sure everything is ready. The kitchen is always a bit chaotic with people moving around and the smell of spices everywhere. It’s a loud place, with the clanging of pots and the constant chatter of the staff. We’ve been at this for a long time, so we don't really need to think about the steps anymore. It’s just muscle memory. The walls in the kitchen are stained with years of cooking, and the floor is always a bit damp from being washed so often. We don't have a fancy office for meetings. Usually, people just come by the back door and we talk while things are boiling on the stove. Kolkata is humid, and the kitchen makes it worse, but we just wipe our faces and keep going. We don't do any big advertising. Word gets around the neighborhood when someone has a party or a wedding. We just focus on the food and making sure there is enough for everyone. It is hard work, standing on your feet all day, but it’s what we know. We just try to keep the flavors right and the deliveries on time.
