Our place is at 116 Vivekananda Road, right near the Amherst Street police station. It is a very busy part of Kolkata, and there is always something going on outside our door. We do a mix of things here, running the restaurant and also handling catering orders for people in the neighborhood. The kitchen is the heart of the whole operation. It is loud, hot, and there is always a pot of something bubbling on the stove. We have a lot of big metal containers for when we have to take food out to events. Sometimes the floors get a bit slippery from the steam, so we have to be careful when we are rushing around. We aren't a big corporate chain. It is just us trying to get the orders right and making sure the food is ready on time. The 700006 area is full of old houses and narrow streets, so getting the catering van out can be a bit of a challenge some days. We spend a lot of time cleaning up after a big shift, washing the giant pots and sweeping the dining area. We have been here for a while and most of the locals know our faces. It is just regular work, cooking and serving, and trying to keep everything organized in the middle of the daily rush.
