Sometimes the building's elevator is out of order and we have to take the stairs, which is a good workout I guess. We aren't trying to act like some big international chain. We’re just a small group of people who are passionate about the restaurant world in Kolkata. We have our good days and our bad days, just like anyone else. The heat in the afternoon can be tough, but we just turn the fans on and keep going. We like being in the heart of the city, even if it is a bit loud and messy sometimes.
