Our kitchen is located at 8/92 in Bijoygarh, right near the Sabuj Sangha Club. Being near a club like that means we are often right in the middle of whatever is going on in the neighborhood, especially during the big puja festivals or local sports events. We’ve been catering from this spot for a long time. It’s a local operation, and we mostly serve the people who live in the Bijoygarh and Jadavpur areas. The setup is pretty basic. We have our big stoves, our stacks of plates, and the large crates we use to transport food. It’s not a quiet job. There is always the sound of knives hitting cutting boards or the roar of the gas burners. We get our vegetables from the local vendors every morning to make sure everything is fresh for the day's orders. Sometimes we have to cook for hundreds of people, which means staying up all night, but other days are quieter with just a small family dinner to prepare. We don't really have a front office with a receptionist. Usually, if someone wants to hire us, they just come by the back or give us a call on the mobile. It’s a hands-on kind of life, and we are usually covered in flour or spices by the time the day ends. It suits us just fine, and we’re happy to be part of the local community here in Bijoygarh for so many years.
