The kitchen is the heart of everything we do. It’s a bit cramped when everyone is working at once, but we make it work. We don’t have a marketing department or anyone to write fancy speeches for us. We just cook. We handle a lot of different types of gatherings, from small family meals to bigger things where we need every single pot we own. The floors are usually a bit damp from being scrubbed, and there’s always a stack of crates near the entrance. We source our stuff from the local markets because it’s easier and we know the vendors there. If the onions are bad one week, we hear about it from the cooks immediately. We don't have a lot of rules, just that the food has to be hot and it has to be ready on time. Timing is usually the hardest part of the job. You’re always watching the clock while trying not to burn the garlic or overcook the meat. It’s a balancing act that we do every single day. Most people who hire us are from the neighborhood or found out about us from a neighbor’s party. We like it that way. It keeps things personal and simple for everyone involved. We just keep our heads down.
