We spend most of our mornings at 87/1 Jatindra Mohan Avenue in Hatkhola. It’s a busy spot, and things start early here. We handle a lot of food containers and heavy pots. Usually, the kitchen is full of steam by six or seven in the morning. The street outside gets quite loud as the day goes on. We’ve been at this address for a while now. It’s just us doing the work, making sure things get sent out on time. Sometimes the traffic on the avenue makes things tricky, but we manage. We aren’t a big fancy operation, just a kitchen where we cook and pack stuff up. You see the same faces walking by every day. Hatkhola has a certain way about it. It’s old and crowded but it’s where we work. We don't have much time for sitting around. Usually, someone is chopping something or washing up. The floors are often wet from cleaning. We try to keep things moving. There’s always a list of things to do, and we just go through it one by one. Our neighbors know us by the smells coming out of the window. It’s hard work, standing on your feet all day, but that’s just how it is for a caterer here. We don't change much. The 700005 area stays the same mostly. We just keep the stove going and get the orders ready for whoever needs them that day. It’s simple enough. We just pack everything into the van and head out.
