Hotel Kolhapuri Tadka

It is pretty busy here in Lane Number 1 most days. We are tucked away in Rajarampuri, right behind that big Pantaloons store and across from the V T Patil Hall. If you know Kolhapur, you know this part of town gets a lot of people walking through. We started this place because we wanted a spot where people could just sit and eat without it being a whole big thing. The kitchen gets hot, especially when we are doing the spices for the tadka, but that is just how it is. Sometimes the floors get a bit scuffed up from the lunch rush, and we are always running around trying to keep up with the orders. It isn't a fancy setup. We have got our tables and chairs, and the staff usually knows the regulars by name now. Most of the guys working here have been around since we opened. We spend a lot of time just making sure there is enough stock in the pantry and that the chai is ready. Living and working in Rajarampuri means you see the same faces every day. It feels like a neighborhood spot more than anything else. We don't spend money on big signs or anything like that. We just focus on the cooking and making sure everyone gets their food on time. It is a lot of work, and some days are harder than others, but we like being right here in the middle of everything.
