We’re over in Pratap Nagar at Surya Nagri, shop number 500. It’s a bit of a walk from the main gate but people find us eventually. We’ve got the big kadhais going early in the morning, making the basic syrups and milk solids. The smell usually travels pretty far down the street. It’s a lot of manual work, stirring the pots for hours until everything is just right. We don’t use many machines because we think it tastes better when you do it by hand. The shop has a big glass front so you can see what’s ready. We try to keep things simple and traditional. Sometimes we run out of the popular stuff by the afternoon, and we just have to tell people to come back tomorrow. We don't like to sell anything that's been sitting around too long. The area is growing fast, but we’re just staying in our spot and doing what we know. It’s a family-run place, so there’s usually some arguing in the back about who forgot to buy more sugar. But that’s just how we work. We aren't a big chain or anything, just a local sweet shop trying to do things the old way. It’s a lot of long hours on our feet, but we’re used to it by now. We just want to make sure the boxes we pack up are full of good stuff every single time and that people leave happy.
