If you’re on Tonk Road near Lal Kothi, you’ve probably walked past us or at least smelled what’s cooking in the back. We’ve been at this spot for a long time now, and the shop is usually pretty busy with people looking for a snack or a box of sweets to take home for their family. The morning starts very early for us, way before the traffic gets heavy on Tonk Road, with the smell of milk and sugar filling up the whole workspace. We have glass counters filled with different items, and the staff is always moving around, packing boxes or cleaning up the floor. It gets really crowded during the festival months, and sometimes the line even goes out the door. We don't spend much time on fancy talk or decoration; we just focus on making sure the trays are kept full and the place is wiped down. There are always a few regulars who come in every single day for the same piece of barfi or a hot samosa. The back area is where all the actual work happens with the big pots and heavy pans. It’s a hot and loud environment back there, but it’s what we’ve always known. We aren't trying to be some five-star place; we just want to be where you can get a box of sweets without any fuss. By the time we close, the counters are usually empty, and we start getting ready for tomorrow.
