Sanjay Omelette

If you find yourself in Bapu Nagar near B 18/19, you’ll see Sanjay Omelette. It’s not a large establishment by any means. We operate out of a modest space, but it’s enough for what we do. The stoves are almost always going, and there’s usually a bit of smoke in the air, which is just part of the charm, I guess. We’ve been in Bapu Nagar for quite a while now. The regulars know exactly where to stand so they aren't in the way of the person cooking on the big flat grill. It gets quite hectic during the breakfast hours and again late in the evening when people are looking for a quick bite. We don’t really follow a strict corporate manual here. We just cook things the way people like them. Sometimes the order of things gets a bit mixed up when it’s really crowded, but we always figure it out in the end. The staff is mostly family or people who feel like family. We talk to the customers while we work, mostly about the weather or how the local cricket team is doing. It’s a noisy, lively place that doesn't slow down much until we finally turn off the lights. We aren't looking to win any awards for decor. The tables are functional, and the plates are basic. We just focus on the food and making sure nobody waits too long. It’s a simple life, but we like being right here in the middle of the neighborhood action.
