Our shop, Rawat Sweets, is tucked into Johari Bazar at Gopal Ji Ka Rasta, number 122. It stays pretty busy because of the location. We make all the usual sweets and snacks that people in this part of town look for. The kitchen starts early in the morning because everything needs to be ready before the main rush hits the market. It gets a bit crowded inside, especially during the festivals, but that’s just how Johari Bazar is. We don't have a lot of space for people to sit around, so most customers just grab what they need and head out. We’ve been at this spot for a long time. The counters are always full of different trays. We use the same recipes we’ve always used, nothing too experimental or modern. It’s just food. Sometimes the floor gets a bit sticky when it’s busy, but we try to keep up with the cleaning. People come here because they know what to expect from us. We don't spend money on big signs or loud music. We just focus on getting the milk and sugar right and making sure the frying is done properly. It’s a lot of work, honestly. The street outside is always noisy with rickshaws and shoppers, but inside we just keep busy with the orders. We have a few guys helping out who have been here for decades. They know exactly how much heat each batch needs. It’s a simple life but it keeps us moving and we keep the shop open for everyone.
