About Rajasthan Bhujia Bhandhar – Food & Beverages in Jaipur
I work at Rajasthan Bhujia Bhandhar in Model Town. Our shop is at F-14/19 in Part 2. It’s a decent-sized place, always smelling like spices and hot oil. We make a lot of different snacks throughout the day. People in this part of the city love their bhujia, so we are constantly refilling the bins. It gets very crowded on the weekends when families come out for their shopping. I usually stand behind the counter or help in the back with the frying. The heat from the stoves is something you eventually get used to. We keep the bags stacked high so nobody has to wait. Model Town is a busy area, so there is always a car honking or someone walking past. We don't have a website or anything like that. People just see the sign and walk in. We use the same recipes that have been around forever. Sometimes we run out of the popular items by the evening, and we have to tell people to come back tomorrow. It’s a good feeling when the batch turns out just right. My boss is strict about how the snacks look and taste. We spend a lot of time cleaning the glass cases so the customers can see what they are buying. It's a simple business, really. We make snacks, we sell them, and we start all over again the next morning.
