Our shop is right in the middle of the Vishwakarma Industrial Area, often just called VKI, out on Sikar Road. Being in an industrial zone means our day is shaped by the factory shifts. When the whistles blow for lunch, we get a huge rush of workers looking for something quick and hot to eat. We make a lot of samosas and tea, along with the usual sweets you find in a mishthan bhandar. The air around here is often a bit dusty because of all the trucks and manufacturing, so we spend a lot of time wiping down the counters and the glass cases. It is not the kind of place you would come for a romantic dinner, but it is where people go when they want honest food that doesn't cost a fortune. Sikar Road is always busy with heavy vehicles, so the noise is constant. We start the fryers very early so the first batch of snacks is ready before the morning shift begins. I have been working here for a long time, and I know most of the guys from the nearby units by name. We don't use any fancy machines; most of the work is still done by hand in the back. It is a tough environment sometimes, especially in the peak of summer, but we keep the chai hot and the snacks fresh for whoever needs a break from their work in the factories.
