Param Foods is tucked away in Sudarshan Pura, specifically at F 51 in the Sodala area. It is a real working neighborhood, not really a place for sightseeing. We spend most of our mornings getting everything ready before the sun gets too high. There is always a lot of cleaning and prep work to do. My hands are usually busy with something or other. We don't have a big fancy storefront with neon lights. It is more of a practical space where we focus on the food itself. Some days are incredibly long, especially when we have big orders to finish. The heat in the kitchen can get quite intense during the summer months in Jaipur. We just drink plenty of water and keep moving. People around Sodala know where we are, so we don't have to explain much. We deal with suppliers and delivery guys coming in and out all day long. It gets noisy with the traffic outside on the main roads, but inside we just focus on what we are making. We use simple ingredients and do things the way we learned a long time ago. Nothing too complicated or modern. It is just about getting the work done and making sure the food is right. We’ve been at this spot for some time now and the neighbors are all familiar faces. It’s a good community here in Sudarshan Pura, and we are glad to be part of the local daily routine.
