Pandit Kulphi

My family has been making kulfi for a long time here on Hawa Mahal Road. We are right at 110-111. It gets very hot in the afternoons, so people stop by after seeing the palace. We keep the place simple. There are no fancy chairs or anything, just the cold treats we make every day. Most of our day is spent boiling milk and making sure the flavors are right. We don't change the recipe much because it works. Sometimes we run out of certain things before the sun goes down, but that's just how it goes when you make stuff fresh. I usually sit at the counter and watch the tourists go by. It’s a busy street. The traffic is loud, but it’s home for us. We use the same metal molds we’ve had for years. It’s not a big operation, just a few of us working together. If you walk past the main shops, you'll find us easily enough. We don't have a big sign, but people know the name Pandit Kulphi. Sometimes the neighbors come by just to chat for a bit. We don't do deliveries or anything like that. You just come, stand on the pavement, and eat your kulfi. It’s a messy business sometimes, but it’s what we do. We try to keep things clean and cold. That’s really all there is to it. No need for fancy words when the ice is melting.
