New Mahavir Rabdi Bhandar

It is located over here on New Sanganer Road in Sodala. Most people around here just call it the rabdi place. We spend a lot of time standing over the big iron pans. You have to keep the milk moving so it doesn't burn on the bottom. It takes hours for it to get thick enough. The traffic outside is always loud because it’s near the G P O area and the road is usually full of bikes and cars honking. We have a few benches for people to sit on while they eat, but most people just stand around or take it home in plastic containers. The walls could probably use a new coat of paint, but we are usually too busy with the milk to worry about that. My brother handles the money at the front while I stay near the heat. Sometimes we run out before the evening rush even starts, and people get a bit annoyed, but we can only make so much at a time. It’s a lot of manual work, lifting heavy cans and scrubbing the pots at the end of the night. We don't use any machines for the mixing, just long wooden paddles. It’s tiring on the arms after a full day. We’ve been at this spot for a while now and the neighbors know us well. It’s just a regular shop doing things the old way because that’s what we know how to do.
