Started the shop at Tonk Phatak Barkat Nagar S-6 quite a while ago. It is usually noisy outside with all the traffic, but inside we are just focused on the big pots. Some days the heat from the stove gets to be a bit much, especially in June. We spend most of our time in the back getting things ready for whatever event is coming up next. My hands usually smell like cardamom or fried flour by the end of the shift. It isn't a fancy place. We have some old benches and the floor gets sticky sometimes when we are moving the syrup around. People from around the neighborhood stop by to check what is fresh. We don't really have a big staff, just a few of us who know how to handle the heavy pans without dropping them. Sometimes we run out of things earlier than expected because a big group came through. That is just how it goes here in Barkat Nagar. The address is S-6, and if you see the blue door, you have found us. We do not spend money on big signs or anything. Most of our day is just chopping nuts and making sure the milk doesn't burn on the bottom of the vat. It is hard work, and my back hurts by five o'clock, but the kitchen stays busy. We have been at this spot for years now and haven't changed much about how we do things.
