Mahaveer Rabri Bhandar

Mahaveer Rabri Bhandar is at Shop No:3 in Chandpole Bazar. If you know the area, you know it’s one of the older, more crowded parts of the city. We’ve been in this little shop for a long time. It’s not very big, but we don’t need much space to do what we do. Our main thing is rabri, which means someone is always standing over a large iron kadhai, slowly thickening the milk. It takes patience. You can’t rush it or the bottom burns. The bazaar is always loud with scooters and people shouting, but we just stay focused on the milk. We get all kinds of customers. Some are regulars who have been coming since they were kids, and now they bring their own children. Others are just passing through the market and want a quick taste. We don’t have fancy menus or air conditioning. It’s just a counter, some benches, and the smell of sweet milk. We start early in the morning to get the first batches ready. By the time the sun is high, we’re usually quite busy. We don't spend money on ads or anything. The word of mouth from people in Chandpole keeps us going. It’s a traditional way of doing things, and we haven't seen a reason to change it.
