Our place is at 393 Indira Bazar. If you walk down this road, you can't miss us because of the smell of spices frying. We make all kinds of namkeen and snacks right here. It gets very hot in the kitchen area, especially in the middle of the day when we are frying the large batches of sev and bhujia. We use big metal trays to cool everything down before packing them into plastic bags. The floor can be a bit slippery from the oil, so we have to be careful. We don't have a big fancy storefront. It’s mostly just the counters filled with different yellow and orange snacks. Some are spicy and some are plain. We have been in Indira Bazar for quite a while, and the shop has become a bit of a local landmark for people wanting something salty to eat with their tea. Sometimes the bags aren't sealed perfectly, or the labels are a bit crooked because we do it all by hand. We aren't a big factory. It’s just us working with the flour and spices every day. People come in and ask for a taste before they buy, which is fine. The noise from the market is constant, but we've gotten used to it. We just keep our heads down and keep the fryers going until we run out of ingredients for the day. Sometimes we finish early if the stock sells out quickly.
