We make traditional sweets and some snacks like samosas and kachoris that people eat for breakfast. The kitchen is in the back, and you can usually hear the sound of clanking pots and pans from the street. We don’t use any fancy packaging or have a brand consultant. We just wrap things in paper or put them in boxes and hand them over. I spend most of my day behind the counter weighing out sweets. The afternoon heat can be tough in this narrow lane, but we have a fan that keeps us going. We get a mix of locals and people who are just visiting the bazar for shopping. We don't have a big menu on the wall. People usually just look at what’s fresh in the counter and point to what they want. It’s a very direct way of doing things. Sometimes we run out of kachoris by ten in the morning, and that’s just the way it is. We don't make more once the batch is done. It’s a small, family-run place and we like keeping it manageable.
