Jodhpur Sweet House

Located at Tonk Phatak, Jodhpur Sweet House is where we spend most of our time. It’s a busy area with the railway crossing nearby. The morning starts early here, usually before the sun is even up, because the milk arrives and everything needs to be started. The kitchen is in the back and it gets hot pretty fast once the big stoves are on. We make sweets day in and day out. Sometimes the rain makes the street outside muddy, but people still come in anyway. It’s not a big place. There are trays of barfi and gulab jamun sitting on the counters. We don't really have a big team, just a few of us who know how to handle the sugar syrup and the frying. My hands usually smell like cardamom or ghee by the time I go home at night. The flyovers and the traffic at the phatak make it noisy, but it’s a good spot for a shop. People stopping by on their way home grab a box of something for their kids or for a guest. We don't change the recipes much. Why would we? They work just fine. The glass on the display case gets fingerprints on it every five minutes, so we are always cleaning that with a rag. It's just a regular shop doing regular work. We've been at Tonk Phatak for years now, just keeping the same routine every single day for the neighborhood.
