Ghasi Maharaj Halwai

Ghasi Maharaj Halwai is down in Chandi Ki Taksal at Janta Bazar, shop D111/116. It’s a busy area with a lot of trade going on. We are halwais, so we spend our days around big pots of oil and sugar. It’s a tradition in our family. The shop is tucked away, so you have to look for the sign. We make snacks and sweets that people take home for their families. It gets very crowded during the wedding season because everyone wants large orders. We have a few guys working in the back who have been with us for years. They know exactly how long to fry things without even looking. The walls have some soot on them from the stoves, but that’s just part of a kitchen like this. We don't use any fancy machines to mix the dough, we do it by hand. It’s hard on the arms but it makes the food taste right. Janta Bazar is a loud place, full of shouting and horns. We’ve been here so long we don’t even hear it anymore. We just focus on the work. Sometimes we sit on the stools outside when it’s slow. We’re just a local shop doing what we’ve always done at D111/116. It’s not a complicated life but it’s ours.
