Choudhary Dhaba

Our place is on Khatipura Road in Jaipur at Plot Number 4. It is part of Marudhar Vihar and it is a pretty straightforward neighborhood. Choudhary Dhaba has been here since the area was a bit quieter than it is now. These days there is a lot of traffic and people are always in a hurry. We have a small seating area and we try to keep it as cool as possible when the sun is beating down on the road. The walls have a few simple pictures and we keep the menu on a board. We do not do anything fancy. It is just basic food that we know how to make. I usually go to the market early to get the vegetables and then we start the prep work. Sometimes the stove gives us trouble or the water supply is a bit slow but we figure it out. The people who live in Marudhar Vihar come by quite often and we know many of them by name. It is a local spot where people can just sit for a few minutes. We do not have a big team of workers. It is just a few of us doing the cooking and the cleaning every single day. We are not trying to be the biggest place in Jaipur. We are just happy to have our spot on Khatipura Road and keep things moving. It is just a regular way to make a living and we stay busy with it.
