We are tucked away on Swam Path in the Mansarovar area. It is a quiet enough street compared to the main markets, but we still get a good number of people coming by. Our main thing is making khaman, which we do every single morning in big batches. You can usually see the steam coming out of the kitchen area early in the day. We don't have a lot of seating, just a few spots for people to stand and eat their snacks before they head off to their jobs or schools. Mansarovar is a huge residential place, so we see a lot of the same neighbors every day. We don't do any fancy packaging; we just put the food on plates or in simple boxes if someone wants to take it home. The recipe we use hasn't changed at all over the years because people seem to like it the way it is. I spend a lot of time at the front, counting change and talking to the regulars about the weather or the local news. It gets pretty hot in the summer, especially with the big steamers running all the time, but we just keep the fans going. It isn't a big corporate chain, just a small shop where we focus on one or two things and try to get them right every day. If you are walking down Swam Path, you will probably smell the mustard seeds tempering in the oil.
