Chawlas Chicken

Chawlas Chicken sits right in the middle of Russel Chowk in Jabalpur. We are in the basement area, just below the Ayushman Hospital building. It’s a busy part of town with a lot of people coming and going because of the hospital and the other shops nearby. We’ve been at Shop No 10 for a good while. Inside, it’s mostly about the kitchen and getting the orders out to the customers. The smell of the spices usually fills the small space long before we actually open the doors for the day. It’s a practical place, nothing too decorated or flashy. We spend our hours chopping, marinating, and managing the stove. The staff has been with us for years, and we all know our roles pretty well. Jabalpur heat can be something else in the summer, so the kitchen stays very warm, but we keep the fans going. People find us easily because of the location, even if we are a bit tucked away downstairs. We don't spend much time on fancy talk; we just focus on the chicken dishes we make. Most of our customers are regulars from around the neighborhood or people visiting the hospital who need a meal. It is loud, it is fast-paced, and it is how we make our living. We just open the shutters every morning and get to work until the last order is done at night. There are no fancy uniforms here, just people working hard and serving whoever walks in.
