Jammu Kasmir Panjabi Dhaba

Our place, Jammu Kasmir Panjabi Dhaba, is out on the bypass road near MR 10 Road in Indore. We are quite close to the Omax 1 building, which is a big landmark around here. Being a dhaba, we do not have fancy walls or air conditioning in every corner. It is an open kind of place where the air from the road blows through. We spend our nights and days cooking over the big flames and making sure there is enough seating for the crowds that show up after dark. The MR 10 road is always developing, so there is constant construction and noise around us. It is a very honest kind of work. We serve food on simple plates and we do not care much for decorations. The guys working here have been with us for a long time, and we all just muddle through the busy shifts together. It gets really crowded on weekends when people from Indore drive out to the bypass for a change of scene. We do not have a website or a social media manager. People know us because they see the lights from the road or they remember the spot from their last trip. It is often hot and a bit smoky from the tandoor, but that is just part of the dhaba life. We just keep the stove hot and the water jugs filled for whoever stops by.
