You can find us in Sector 15 Part 2. This area of Gurgaon has a lot of families and people living in rented rooms, so there is always a demand for a quick meal. Our kitchen is tucked away in plot 57. We focus on getting food ready for people who don't have the time to cook for themselves. The space is mostly filled with large stoves and big pots. We start our prep work quite early, chopping vegetables and getting the spices ready for the day's menu. It is not a place with fancy decorations; we just have what we need to get the job done. The walls are a bit stained from the steam, but we scrub them down as much as we can. We have a few delivery boys who know the shortcuts around Sector 15 to avoid the traffic jams on the main roads. When lunch time hits, it is a bit of a scramble to get all the tiffins and packets ready. We try to keep things simple and honest. The menu doesn't change much because people like to know what they are getting every day. It gets pretty humid in the kitchen, but we have a couple of fans that help a little bit. We are just a small team of people trying to provide a meal that tastes like something you would make at home if you had the time. It is hard work but we are used to the routine.
