Being in Shop Number 102 at Huda Market is quite something. If you know Sector 31 in Gurgaon, you know how crowded it gets, especially near Om Sweets. We have been part of this market for a while now. Every morning starts with the same routine of getting the supplies delivered and cleaning up the front. The market has its own rhythm. You have people fixing cars, people buying groceries, and then people coming to us because they are hungry. We aren't trying to be one of those fancy places you see in the bigger malls. This is a dhaba, through and through. The walls might need a fresh coat of paint every now and then, and the noise from the street never really stops, but that is part of the charm of being in Gurgaon. Our staff has been with us for a long time, so we all know how to handle the evening rush when everyone finishes work. It gets a bit chaotic, but we manage. We don't use any complicated recipes or secret ingredients. It’s just standard cooking like you’d find in any Punjabi household. We focus on getting the food out fast because people in Huda Market are usually in a hurry. It’s a busy life here, but we wouldn’t have it any other way. We just keep our heads down and work.
