Patiala House

Patiala House is out here on Meerut Road, specifically at C 8/1 in Sector 22 UPSIDC. It’s mostly an industrial area, so we get a lot of workers and people passing through on the main road. The location isn't exactly in the middle of a fancy shopping district, but it works for us. We've been operating out of this UPSIDC spot for some time. The kitchen is always hot, especially during the lunch rush when everyone comes in at once. We don't really have a big fancy sign or anything, just the name on the front. It’s a practical setup for the kind of area we are in. Some days the dust from the road gets everywhere, so we spend a lot of time cleaning the tables and the floor. It’s just how it is around here. We start early to get the stove going and prep the ingredients. The guys in the back have a rhythm down, even when it gets stressful. We don't really do much talk, just focus on getting the food out. Being on Meerut Road means there's always traffic, so there's a constant hum of engines in the background. It’s a simple business, really. We serve the people who work nearby and those who happen to be driving through Sector 22. It’s a lot of work but we’ve made a life for ourselves here at C 8/1. We just keep our heads down and keep the pots moving.
